French Fridays with Dorie: Marie-Helene's Apple Cake


Here is my version of Marie-Helene's Apple Cake from Dorie Greenspan's beautiful book, Around My French Table. I didn't have an 8" springform, so doubled the recipes, and used a 9" and filled ramekins with the extra batter. Mine came out very moist. I think this was probably due to having to use a larger springform maybe filling it too high. It took about 1 1/2 hours to bake. I really loved using the rum! I think this batter would make an awesome base for a noodle kugel!

  1. I think a lot of us had 9" pans!!! I did 1 1/2 times but my pan was 3" tall so I might could have done 2 times easily! Did you like it? I put ice cream with mine...YUM!

  2. Looks great! I had a 9" springform, too, and went for mini-bundts. Too lazy to peel enough apples to double the recipe! :)

  3. Mine was super moist as well, using the original recipe. Yours looks delicious- I'm loving those big chunks of apple!
